I grew up on a small farm in Alberta, with pigs, cattle and a large garden. Ah, the wonderful garden. In the fall we canned, pickled, jammed and jellied our earthly delights and stored any remaining vegetables in the root cellar for winter. The cycle of planting, nurturing and feasting repeated itself year after year- a constant reminder of the basics of life. Meal time was always a way of appreciating what we had and the efforts that went into it.

My roots in cooking as well as my passion for helping others led me to pursue a career as a personal chef. However, I thought if I were to take this seriously, I’d best seek the advise of an experienced professional in the industry; so, I sought out former Teatro Executive Chef, Michael Allemier. He described the industry as tough, with insanely hot kitchens and stressed-out, knife-throwing chefs demanding excellence and speed. (Well, some of it was exaggerated, but some of it very true! Hell’s Kitchen, here I come!). He emphasized the importance of training and real world experience to make it in the food industry, so I applied to the SAIT Professional Cooking Program. This is where my career began.

I enrolled in cooking school in January of 2002, learning from some of the best chefs in the world. It was an intense, hands on training program focusing on cooking methods and knife skills.

Upon graduating with a 4.0 GPA I received 3 awards: the City Palate scholarship, the Louise B. McKinney award and the Sysco award.

During my second semester at SAIT I began working at Rouge. Here I learned how to apply the skills I learned at SAIT, while working under head chef Paul Rogalski. What a rush! Rouge currently stands as #60 in the San Pellegrino world’s best restaurants. The cuisine at Rouge is of the highest quality in Calgary, with an ever-changing menu and many ingredients coming directly from the restaurant’s own garden. I continued my work at Rouge until I took maternity leave in the spring of 2004.

Upon returning from maternity leave I continue to grow my business, Personal Thyme, which I began in 2002. I enjoy being able to cook for people, knowing that I’m helping families eat healthier and simplifying their lives. The personalized service I’m able to provide gives me the greatest satisfaction.
In January 2008 my son was born and I continued to manage business and home life. Business has grown to include a large catering component with 5 additional staff. We cater up to 5 events per night while continuing to maintain the highest degree of food quality and service. We thrive on working hard and making clients happy!

Catering Services

Personal Thyme caters dinner and hors d’oeuvre parties for up to 200 guests. Sit down multi-course dinners are available for up to 25 guests.

The services we offer include:

  • private dinner parties
  • cocktail parties
  • buffets
  • cooking demonstrations

Personal Thyme caters holiday parties, bridal and baby showers, weddings, birthdays and anniversary parties.

Personal Thyme also offers corporate catering for breakfast, lunch or dinner.

All menus are fully customized to suit your event, and special dietary requests can be accomodated. The cost of your event depends on the number of guests and the menu selected. Costs start at $30 per person for hors d’oeuvre parties and $75 per person for dinner parties.

Personal chef services are available weekly, bi-weekly, or monthly and includes:

  • Meal preparation
  • Packaging and labelling
  • Complete heating instructions

How the Service Works:
Contact me by phone or email. We set a date to meet for a free consultation. At the consultation we discuss your personal preferences, frequency of service, dietary needs, and also set a delivery date. I will email a menu for your approval and make any changes, if necessary. Menus change weekly and vary depending on the availability of ingredients. Meals are freshly prepared in a commercial kitchen space which is regulated by the City of Calgary as well as the Alberta Health Region food services public health division. Meals are packaged, labeled and then delivered to your home for your future enjoyment. Simple re-heating instructions are included with your menu. Having company or need to skip a delivery? No problem, this service is designed to help you when you need it, and provide flexibility for dynamic lifestyles.

The experience was absolutely seamless. I don’t know your experience with other caterers, but I’ve noticed that most of them do a fair bit of pre-cooking, and that has a negative impact on food quality. Corinna showed up early with her chef, prepared virtually everything on site, made everything absolutely delicious, served with a smile, cleaned up afterwards and came in on-estimate. I’ll never use another caterer, unless Personal Thyme is already booked.

I have used other caterers before and I was happy with their service. However I attended a party where Corinna catered for about 50 people and I was so impressed with the food I hired her for a sit down meal for 30 at our home. She was very responsive on the e-mails, and worked with my 80-year-old mother on the menu (it was a birthday party for my parents). The food was amazing. We started with a soup, which was served to everyone. Then the main course was served via buffet. We had two meat dishes, vegetables and salad. The combination of meat, vegetables and salad were perfect, the flavours all blended appropriately. Almost everyone there asked me if she had a business card because they were so impressed with the quality of the food. There was food left over, although almost everyone went for second helpings. Her presentation was excellent, from the soup to the food on the buffet.

Well, did I luck out finding Corinna! She is an amazing chef with a very big heart. My son was diagnosed with Diabetes last year, at the age of 12 which severely restricted what he could and could not eat. My youngest daughter is a vegetarian. Not being a chef myself or even liking to cook really, I felt overwhelmed by life now being all about food and cooking and schedules. Corinna to the rescue! She has been an angel in our family, creating special meals for both my son and my daughter that are nutritious, cooked with organic ingredients, and so very delicious. She charged a very reasonable rate. There is just something really wonderful about opening my fridge and freezer and seeing that Corinna, the food angel, has been by. Then we sit down and eat and laugh and have fun together and the clean-up is easy! I highly recommend Corinna’s services and her hugs. Much gratitude.
